Curried Ham & Vegetables on Rice
Submitted by LCD - I just came up with this one night cause I couldn't figure out what to eat!
1 cup of diced frying ham
1/2 cup of sliced Yellow Onions
1 1/2 cup of Frozen vegetables (peas/carrots or any sort of stir fry vegetables)
1 tablespoon of Olive oil
2 tablespoons of Curry Powder (or however much to taste)
1 teaspoon of garlic powder
1/2 package of El Paso Taco Seasoning
2 cups of cooked Rice (white, brown or wild rice)
Cook a pot of rice and then set aside. In a wok pan, add in the olive oil and when it gets hot, add in the onion, the vegetables and the diced ham along With the garlic, curry powder and taco seasoning. Cook until the ham gets a golden brown color and then place on a bed of rice and serve. Makes about 2 servings
Blueberry French Toast

12 slices day-old white bread, crusts removed
2 pkgs (8 oz. each) cream cheese
1 cup fresh or frozen blueberries
12 eggs
2 cups milk
1/3 cup maple syrup or honey
Sauce:
1 cup sugar
2 tablespoons cornstarch
1 cup water
1 cup fresh or frozen blueberries
1 tablespoon butter or margarine
Cut bread into 1 inch cubes; place half in a greased 13" by 9" x 2" baking dish. Cut
cream cheese into 1 inch cubes: place over bread. Top with blueberries and remaining bread. In a large bowl, beat eggs. Add milk and syrup; mix well. Pour over bread mixture. Cover and chill 8 hours or overnight. Remove from refrigerator 30 minutes before baking. Cover and bake at 350 degrees for 30 minutes. Uncover; bake 25-30 minutes more or until golden brown and the center is set. In a saucepoan, combine sugar and cornstarch; add water. Bring to a boil over meduim heat; boil for 3 minutes, stirring constantly. Stir in blueberries; reduce heat. Simmer for 8-10 minutes or until berries have burst. Stir in butter until melted. Serve over French Toast. Yield: 6-8 servings (1 3/4 cups sauce)
Ericka's Open-Face Ham, Cheddar and Apple Butter Sandwiches

(Thinly sliced roast turkey can be used instead of Black Forest ham.)
3 ciabatta rolls, halved horizontally, or 6 1/2 inch think slices country-style bread
2 tablespoons olive oil
6 tablespoons apple butter (can be found in most grocery store deli/produce sections)
4 tablespoons Dijon mustard
1 1/4 pounds Black Forest ham, thinly sliced
12 ounces extra-sharp white cheddar cheese, sliced
1 bunch fresh chives, chopped
Brush cut side of ciabatta rolls with oil. Place rolls, cut side up, on baking sheet. Broil until rolls begin to brown around edges, about 2 minutes. Spread apple butter and mustard on each roll half. Top with ham, then cheese. Broil until cheese melts and begins to brown in spots, about two minutes. Sprinkle with chives and serve. (Makes 6 servings)
Spinach Salad

Mix together:
1/2 head iceberg lettuce or one stalk romaine lettuce
1/2 lb baby spinach leaves
3 hard boiled eggs, sliced
1/2 lb bacon
1/2 red onion (sliced in rings)
Dressing:
1/4 cup sugar
1/4 cup white vinegar
1/2 cup mayo
pour over lettuce/spinach mixture just before serving
Bavarian Bread Dumplings (Bayerische Semmelklosse)

10 white rolls
1 to 2 cups milk
1/2 cup bacon or ham
1 tablespoon butter
1 small onion, chopped
1 tablespoon parsley, chopped
3 eggs
salt and pepper
nutmeg
Slice rolls finely and soak in lukewarm milk. Bread should be moist, but not soggy. Dice bacon or ham and fry in butter together with chopped onion and parsley. Add eggs and seasoning to bread slices and combine with fried ingredients. Shape into dumplings. Cook in salt water for twenty minutes. Serve immediately. Serves four.
My Grandmother' s Favorite German Apple Cake

2 eggs
1 c. white sugar
1 cup brown sugar
dash of salt
1 tsp. cinnamon
2 tsp. baking soda
1 tsp vanilla
2 cups flour
4 c. diced apples
1/2 c. vvegetable oil
1 c. nuts (walnuts or pecans work well)
Cream eggs and sugars. Add oil. Beat well. Add sifted dry ingredients, apples and nuts. Pour batter into greased and floured 9 x 13 inch cake pan. Bake at 350 degress for 45 minutes. Cool.
Easy Lemon Bars

1 package angel food cake mix, dry
1 can leon pie filling
1 cup coconut
Mix all together and spread in a lightly greased jelly roll pan. Bake 25 minutes at 350 degrees. May frost with a lemon glaze of powdered sugar and lemon juice.
Folger's Cinnamon Supreme

3 cups brewed Folger's Coffee
3 tablespoons sugar
8 whole cloves
3 inches stick cinnamon
Whipped cream
Shredded orange peel (optional)
Prepare coffee as directed on can/package. In a saucepan, combine hot coffee, sugar and spices. Cover; bring to boiling. Remve from heat and let stand about 5 minutes covered. Strain. Then pour into cups; top each with whipped cream. Add orange peel if desired. Serve with cinnamon stick stirrers. Makes 4 to 6 servings.
