Alrighty. :) We haven't kept up with the recipes the way we'd intended to - real life has been a bit hectic - but we plan on doing a better job. So, our recipes for this update are yummy and (for the most part) fairly easy. **grins** After all that fancy cooking over the Holidays, we figure you're probably in need of a break. ^.~

BBQ Chicken Sandwiches
2 - 4 boneless, skinless chicken breasts (substitute dark meat if preferred)
Your favorite BBQ Sauce
Bagels (plain or onion)
Boil the chicken until done. Remove from heat, cool. Cut into slices or shred. Place in a baking dish, coat with bbq sauce. Let bake in a 350 degree oven for 15-20 minutes until warmed. Place on bagels and serve with your favorite sandwich toppings (sliced cheese, tomatoes, lettuce...)
Bubble and Squeak
1 lb. hamburger
2 onions, sliced
2 cans mushroom soup
4 cups potatoes, raw, sliced or diced
2 cups carrots, sliced
Brown meat and onions. Layer potatoes and carrots in casserole dish. Pour soup over top. Bake at 350 degrees F. for 45 minutes.
Chicken and Broccoli Mac
1 package macaroni and cheese
1 cup chopped cooked chicken
1/2 cup frozen broccoli
1/4 tsp pepper (opt.)
Prepare macaroni and cheese as directed, stir in broccoli, chicken and pepper (if desired). Heat thoroughly.
Serves 3-4.
Cracker Brittle
12 - 2 1/2 x 5 inch cinnamon flavored graham crackers
1 cup butter or margarine
1/2 cup sugar
Heat oven to 350 degrees. Line 15 x 10 inch jelly roll pan with foil. Arrange crackers over bottom of prepared pan. In small saucepan, combine butter and sugar. Bring to a boil over medium heat; boil 2 minutes, stirring occasionally. Remove from heat; pour and spread evenly over crackers. Bake at 350 degrees for 15 to 18 minutes or until golden brown. Cool completely. Break or cut into pieces.
36 servings.
Easy Cobbler
1 stick butter or margarine
1 cup flour
1 cup milk
1 cup sugar
fruit (1 med can)
Melt butter or margarine and pour into a 8-inch square cake pan. Add the other ingredients except for the fruit and stir. Add fruit. Bake at 325 - 350 degrees until golden brown. (Aprox. 25 minutes.)
Orange Gelatin
1 can (6-oz) of frozen concentrated orange juice
1 can (20-oz) of crushed pineapple
1 large package (6-oz) of orange gelatin
3 cups of shredded carrot
½ cup of mayonnaise
1 envelope of Knox gelatin
Prepare the orange juice as directed on package.
Boil 2 cups of orange juice, and then add orange gelatin.
Dissolve contents of Knox envelope in the remaining orange juice, and then incorporate to the heated mixture.
Then you add the rest of the ingredients and put it in a blender for 2 minutes.
Pour into a mold. Chill until firm.
Potatoes a la Dad
2 cups mashed potatoes, cold
8 oz. cream cheese, room temperature
1 onion, medium, minced
2 eggs
2 T. flour
1/2 cup French fried onions
a dash of salt and pepper
Put mashed potatoes in large mixing bowl. Add cheese, onion, eggs, and flour. Blend, then beat at high speed until light and fluffy; add salt and pepper. Spoon into greased one quart baking dish. Top with French fried onions. Bake at 300 degrees for 30-35 minutes, uncovered.
Sweet Tortilla Chips
Oil for deep frying
10 flour tortillas, cut into quarters
1/4 cup sugar
1/2 teaspoon cinnamon
In deep fryer or heavy saucepan, heat 2 to 3 inches of oil to 375 degrees F. Fry tortilla
pieces in hot oil on each side, about 30 to 45 seconds or until slightly puffed and golden brown. Drain on paper towels. Combine sugar and cinnamon. Sprinkle warm chips with mixture. 40 chips.
Taco Dip
1 cup sour cream (8 oz.)
1 8 oz. pkg. cream cheese
1 pkg. Taco seasoning mix
Mix above ingredients together until smooth.
Spread evenly on snack platter.
Layer on top of mixture:
chopped green onions
tomatoes (diced)
sliced black olives
shredded lettuce
finely shredded taco cheese
Serve with a side bowl of tortilla chips.
